Sweet potato chocolate brownie recipe
We love, love, love brownies and we love, love, love sweet potato so what better than sweet potato brownies?!
We’ve been experimenting with a few types of brownie recipes for a while, including raw brownies, but today it was all about making gooey, chocolaty brownies that contain no processed sugar, dairy, eggs or gluten. Having done a quick internet search we found a base recipe for the brownies. However, given that we are terrible at following recipes – and wanted to make the most of the things in our cupboard – we deviated slightly from the source recipe http://ourfourforks.com/sweet-potato-brownies/
Ingredients
To make our recipes you will need:
- About 2 medium sweet potatoes, cut into squares and boiled (boiling takes about 15min)
- 2 cups of dates – soaked for a couple of hours in water
- 1/4 of a cup melted coconut oil
- 1tsp vanilla bean paste
- 2 flax seed eggs (basically 1 tbsp ground flax to 2 tbsp water – mixed together and left in the fridge until it goes gloopy)
- 1/4 of a cup honey
- 1/4 of a cup coconut sugar (if you don’t have this use about 3/4 of a cup of honey)
- 1/4 cup coconut flour (you could use ground almond instead, but may need to add a bit of almond milk to make the mixture wetter as ground almond really sucks up moisture)
- decent pinch of pink Himalayan salt (or good quality sea salt)
- 1/3 cup of good quality cocoa (you could use raw cacao but as you are baking these it seems a waste to use an expensive raw product. Just pick a really dark cocoa with no sugar – we use Green & Blacks)
- 1 tsp baking powder
- 1/2 cup of dried cherries
Instructions
- Put the boiled sweet potato and soaked dates in a food processor and blend well .
- Transfer the mixture to a large bowl.
- Melt the coconut oil and add the honey, cocoa and vanilla.
- Add the melted mixture to the sweet potato and date mixture and stir.
- Add the flax seed ‘egg’, salt, baking powder, coconut flour and coconut sugar to the mix and stir it all together.
- Finally stir in the dried cherries and put it all a baking tray lined with baking paper.
- Put in the oven at 180 degrees celsius for 1 hour (though keep an eye on it as depending on your oven the mixture might need a bit less baking time).
- Take out of the oven, cut into square and serve. I like to sprinkle a bit of sea salt and cocoa powder mixed together on the top, but each to their own.
